Tapai (also tapay or tape), is a traditional fermented preparation of rice or other starchy foods, and is found throughout much of Southeast Asia, especially in Austronesian cultures, and parts of East Asia. It refers to both the alcoholic paste and the alcoholic beverage derived from it. It has a sweet or sour taste and can be eaten as is, as ingredients for traditional recipes, or fermented further to make rice wine (which in some cultures is also called tapai).

RESIPI TAPAI PULUT MANIS
Bahan-bahan: 1kg Beras Pulut, 1 biji FU YUAN Ragi

Cara:
1. Basuh beras pulut dan rendam di dalam air sekurangnya selama 3 jam.
2. Kemudian, toskan air rendaman dan kukus beras pulut selama 25 minit atau sehingga masak.
3. Setelah masak, alihkan pulut yang telah masak ke dalam dulang dan biarkan ianya sejuk sepenuhnya.
4. Hancurkan 1 biji bebola ragi sehingga menjadi serbuk kemudian campurkan separuh ke dalam pulut dan gaul rata.
5. Taburkan serbuk ragi selebihnya di atas pulut dan balut pulut di dalam daus pisang atau pindahkan ke bekas kecil mengikut kesesuaian saiz porsi.
6. Simpan di kawasan rendah cahaya dan di dalam suhu bilik sekitar 25 – 30 darjah selsius selama 24 – 36 jam.
7. Apabila pulut telah lembut dan mengeluarkan cecair, bermakna ia telah sedia untuk di makan.
